Chef Jose Luis Hinostroza
A southern California native Jose Luis Hinostroza‘s passion started at 16 years old as a dishwasher in a local Seafood Restaurant, quickly moving up the ranks of the Kitchen. His passion for cooking took him all over the world – from landing a Job at Alinea in Chicago to El Celler de Can Roca in Girona, Spain, Chef de Cuisine in De Kromme Watergang in The Netherlands and Maaemo in Oslo, Norway – learning from some of the best Chefs along the way during his 10 year journey. Until just recently part of the research and development team of Chef Rene Redzepi’s Noma Mexico, and now Executive Chef of ARCA in Tulum and opening next year NATAL, a restaurant focusing on Mesoamerican Cuisine.
