Chef Jonathan Carbajal

From the State of Mexico, Chef Jonathan Carbajal Alvarado is responsible for the new concept of Ambrosia Restaurant, Casa Malca hotel. Since his young age at age 6 began to find a taste for the kitchen, and over time decided to make it more formal finding their true love and passion for food.

At 21 he came to Cancun thus starting his gastronomic journey and the acquisition of knowledge and experience in various cuisines. Finally he was invited by Chef Ichikawa Mitsonuri to open the restaurant "Katsu - ya", where began to learn more Japanese food. It also had the opportunity to collaborate with the renowned Chefs Restaurant "Nobu" in CDMX.

He worked at the Indochine restaurant Nizuc Resort & Spa Hotel and restaurant in Cancun Tora where he was able to reinforce their knowledge specializing in Asian cuisine. 


Again looking to grow had the opportunity to join the team gastronomic at Casa Malca creating the new menu and concept with Asian inspirations Ambrosia Restaurant.
